The Hopper option is a flat rate per ticket. doesn't matter if it's a 2-day or 10 day ticket, it's the same price.
So, no, you can't save money by buying the hopper option for just 1 day. But yes, you can buy the option and then only use it on one day.

If you're not going to hop at all for the rest of your trip, I'd suggest you rethink your plans for that one day. Otherwise, get the park hoppers and take advantage of them for other days as well.

We were also thinking about something similar for our upcoming trip, only wanting to park-hop on 1 day out of 7. Is it possible to use 2 days on a multi-day ticket in 1 calendar day? It would be cheaper to add on an extra day than to purchase the park-hopper option for 9 people.
Disney has done all the math and knows that would be cheaper. It is not allowed. If your non-parkhopper pass was already used at one park in a particular day, you would be denied entrance to a second, different park on that day and would be invited to add the park hopper option.
