I spent Christmas in New Orleans a few years ago. One of the highlights was a Christmas Eve tour to the Bayou to see the bonfires. I really recommend it highly. We took a tour that also included dinner at a plantation.
We are going to be here for a couple days before we leave for a cruise from here. But we plan to do the Streetcars which will give us a nice view of N.O. and they are very inexpensive. And one of the restaurants we have chosen is Mulate's. It is recommended for offering good Cajun food.
I would definitely do a walking tour of the French Quarter. You can get a guidebook and do it on your own or you can take a tour. The ghost tours are fun as well.
Cafe Du Monde is a must visit for beignets and coffee.
If you have time there are some great tours to plantations in the area.
So far our plans are to take the Segway tour the 26th (our first full day) to get a lay of the land and such. We are staying at Harrah's (on comps) and heard it was pretty centrally located. I'd like to hit Luke's for happy hour and maybe dinner at GW Fins? It gets very high marks and we are big seafood fans.

You can walk about anywhere downtown from Harrah's and the streetcar taking you to the garden district is only a couple of blocks walk from there.
I travel to the area 2-3 times a year on business. Personally, I would highly recommend Preservation Hall if you have any interest in music. It is a true piece of Americana and unlike any place else you have ever visited. It's right next to Pat O'Brien's about 1/2 block of Bourbon Street on St. Peter Street. Get there an hour early or you may not get in. I think it's now $12 per person. It's a must do for the area.
