They are three for the whole trip! (and the same thing happens when they turn 10 mid-trip). They can get a plate at buffets/all you can eat places, and share a meal at TS/CS meals.
You cannot include them in FP planning, because they will not have a ticket, so make sure you don't select that person when planning FPs. The child will still be allowed to ride with you. As someone else said, they can eat off an adult's plate at a TS or buffet restaurant, but if you order the child their own meal at a QS or TS restaurant, you will have to pay for that. But yeah - as long as the child is 2 at check-in, Disney considers the child to be 2 for the entire trip.
My son is in the same boat, turning 3 while in WDW. I understand that he is considered 2 for the purposes of ticketing and FP, but would I be able to send him to Lilo's Playhouse after his birthday? Assuming he is potty trained by then of course (wish me luck). Or will they look at his age on our reservation (or through MDE) and he won't be allowed?
