When I was a kid, we always went to WDW for 2 weeks: one was Spring break, and then the week following. My parents always sent in a letter and I think the most I ever had to do was keep a journal or make a photo essay.
Now that was about 20-25 years ago, and I've got my own kids who I'm taking out of school to go to WDW.
My parents always said that just because we were going on vacation didn't mean we weren't getting an education. I have learned a lot from my trips to Disney as well as other family vacations where I might have missed school. So I have no problem taking my kids out. I think your letter is well worded and respectful. I'm glad the teachers are getting creative with their assignments!
