Is it a problem if I book an ADR for 3 people but have 4 that night? Is it better to book for 4 and show up with 3?

I'd think book for 4 show up with 3 instead of the other way around, but I don't have any personal experience with this.
Unless you are talking about one of the restaurants that charges you for cancelling, I would definitely book the four.
Though it might not matter that much either way, at most restaurants a party of three will use the same tables as a party of four.
I did not know some restaurants charge for cancelling? I am looking for a ADR at places like whispering canyon cafe, beaches and cream, maybe a character meal like crystal palace.
The would charge you for a complete no-show but not for arriving with less in your party. Go ahead and book for 4. I had two reservations for a party of 3 and showed up with 2 in January, no issues.

We've never had a problem adding one and we've done this several times. As long as you cancel within the restaurants specified time frame of a non-charge, you will not be charged.
