Can someone please help me - I have been reading some posts and they mention that the resort has a "Quiet Pool" - What exactly is that?

It's not always quiet. What is meant by the "quiet pool" is that it's a secondary resort pool, not the resort's main pool, usually not themed (or not as themed) as the main pool, and not as popular- used mostly for swimming/relaxing and not as much for the wild water play that can happen in the resort's main themed pool. Though, of course, kids will be kids and play can happen anywhere.
The Polynesian, for example, has the main pool- the big Volcano Pool, with the theming and water slide. And then, they have another pool in a different location that is pretty much just a lovely pool surrounded by palm trees, no bells and whistles (in this case, no volcano and slide). So if the Volcano pool was full of kids playing and using the water slide, someone looking for a more serene swimming experience might stroll over to the "quiet pool" and enjoy that one instead.

There are several pools at the different resorts. At the Moderate and Deluxe resorts, there are the big "featured" pools with slides, fountains, ect. but also a few "quiet pools" scattered around the resort. Theses are smaller pools, akin to what you would find at a Holiday Inn. They are near to the rooms, thus the term "quiet."
...quiet pools are not guarded and do not provide towels, at least at Riverside....you can get the towels from the main pool though....they are basically 24/7 so the "quiet" comes from the late, late at night usage....we typically use them as they are closer to our building (yeah, we try to get the same one, year after year)......
