    Tramp's Favorite Pasta

    1 (24oz) jar mild salsa
    1 (15oz) can black beans, drained
    1 (16oz) pkg. multicolored fusilla pasta
    1 cup shredded low-fat Monterey Jack or cheddar cheese
    1 cup fresh cilantro or coriander leaves
    1 cup fat-free sour cream, if desired.

    Bring 4 qts water to a boil in a 6 qt. pan. Pour the salsa into a 1-qt.
    saucepan. Add the beans. Simmer on low heat for about 10 min., stirring
    occasionally. Add pasta carefully to the boiling water. Stir. Cook the pasta
    for 12-15 min., until tender, or according to pkg. directions. Drain the pasta
    over the sink, using a large strainer, or colander. Then return the pasta to
    the pot. Add salsa and beans to the pasta. Stir carefully. Serve the pasta
    with some shredded cheese and cilantro sprinkled on top. (You might like to
    have some sour cream on the side, for dipping the pasta.) Serves 6-8

    My wife and I tried it just for fun to see what it was like, and it was actually very good. We used a hotter salsa and threw in a small jar of jalapenos for heat, but it was also good in its original form.

    Imalismom: Any thoughts of publishing these in electronic or book form for those times when the internet isn't handy? I'd be at the head of the line. Just look for the fat guy with the big grin from eaating all of these great recipes! <grin>
