I know this might be a bit cheesy but for our Honeymoon I booked dinner at the castle, when I made the reservations I made sure that it was for the end of the night during the fireworks and I asked them to Please, Please make it a window seat. the day of the dinner i went right to the castle first thing and made sure that we still had the reservations and beg the lady to do her best to make it a window seat.
Need to say when the fireworks started we were front row and even I was kinda impressed. Best of all when dinner ended we go to walk out of the park alone. there was almost no one around. We have some great pics of that night.
If you can get it it is defiantly worth it and neither of you will forget it.

Big time congrats to you both I would also suggest a fireworks cruise. We did it on our honeymoon and loved it. You could also look into golf or fishing for him. Even though it does not seem a "guy" thing, maybe you could look into a couples package at one of the spas. One last idea would be the train tour at the MK. Good luck and have a great trip.

the fishing excursion is a good idea, also you could rent one of the sail boats, i also agree offero's suggestion on the carriage ride

Hey Guys!
Thanks for all the wonderful suggestions and all the well wishes and congrats, it means a lot to us. I'll tell you I'll either book a fireworks cruise, or have Goofy (his favorite) give him a gourmet coffee basket from the Disney Florist during one of the breakfasts. I will definately take him to the miniature golf course. We have all our ADR's and are due to arrive @ MCO @ 11:25 a.m. on September 16th and are scheduled to leave MCO on September 26th @ 6:55 p.m (10 nights, wohoooo!). We will be staying at ASMu. All I can say about my hubby is that he is an overgrown child just like me. We are taking advantage of the Free Dinning Plan and will be having some meals out of pocket. We have two or three days that are slow (Shopping, pool) and the rest are all parks. We will be using DME for the first time this year (I already have a park-ready carry-on bag in the works).
DH loves Goofy, rollercoasters, thrill rides, the car stunt show @ MGM, Philharmagic, the Indy Show, and eating!!! So I think it's safe to say we'll have a blast!
I'll get a trip report out as soon as we arrive.
