Last Minute Trip?
I've been wanting to go to WDW for a few years now. Previous trips were booked and planned well in advance. Due to circumstances beyond my control, it's just not possible to plan much ahead. If we want to take a trip, it's going to have to be somewhat last-minute.
I don't care about dining reservations. We can eat QS. And I'm not fussy about which hotel we book. It would be just me and my DH. What are the cons, besides missing out on some FP's? It just seems nuts to me, but I'm a planner!
First trip: 1992 with sister, last trip 2018 with grandchild, not done yet!

FP will be your biggest hurdle. You'll probably have a decent selection for MK and AK as long as you are open to various times, likely near the evening, but you probably won't be able to reserve any major attractions, such as Frozen and Soarin' and maybe even Mine Train and Toy Story still. They always have reservations available at any of the All-Star Value resorts.

We often go with no plans, even when booking in advance. For meals, counter-service or even some of the lesser known table service places are available at last minute and we have found a few favorites that way.
Fast passes, we always find a way to amuse ourselves without the headliners, and have even scored some of those last minute (day of or day before)
Planning in advance is great when you can or want to, but you can have a great time just going with the flow as well.

I agree with Nanc. I've done it both ways - planned way out ahead of time, making reservations and all the minute I'm able and gone at the last minute without any specific plan at all. The last time we did a last minute trip, though, was before fastpass+ came into being. Still, I know that we would find plenty of rides to ride and things to do even if we couldn't get fastpasses for some of the "big" rides.

Be encouraged. From the last podcast, Christine reported that since Soarin' Around the World has opened and a third theater added, the standby times are not nearly what they were, also the same with the additional track on Toy Story Midway Mania.
Get what you can in regards to FP and what you lack, just get there at rope drop if it is a "must do"!
Also, regarding dining, I have found the reservation system really helpful, because when you search you can see everything that is available or you can specify by location. On my last trip, we were in MK and it was pouring rain at about 1:30 and I pulled up the app and got a reservation for Liberty Tree Tavern at 2 pm.!!!
