I don't know for sure, but I wouldn't think you would have any trouble getting in to any of those places. I think the restaurants in the parks tend to fill up quicker.

Oct 12, 6 ppl, BW has openings for Flying Fish cafe at 5:30 and Kouzzina by Cat Cora has an opening at 5pm and 5:15. Nothing else comes up when I search for available reservations but those two.

If you're not picky and couldn't get into ESPN, you should definitely be able to get a table at Big River Grille. At 5:00 you may also be able to get a table at Kouzzina.
I would venture to say that many people in October who are staying at the Boardwalk, will be heading to the Food & Wine Festival so getting a table around 5:00 at any of the BW restaurants shouldn't be a problem.

Last time we went to espn club, we had no trouble getting seated. I think we were even bummed that they called us before we finished walking around the gift shop.
You should be able to get into the ESPN Club at 5:00pm in October. As someone else said that the Food and Wine Festival will be in full swing in October and the Boardwalk locations should have tables available. I will warn you that IMHO the ESPN Club is over-priced for the quality of food. If you are looking for a place to just walk in, I would suggest the Big River Brew Works. The food is good and the prices (again IMHO) are reasonable.
