Heading to Disney with my nephews this October and was curious if Hollywood Studios still did the Jedi training? If so, does anyone know where to go to do this? Would I/we need to get there when the park opens?

They are still doing it, we did it in April. The age range is 4-12 I believe. Twelve is definitely the cut off, but I'm not positive if it starts at 3 or 4.
We were lucky to catch the show in the afternoon and were still able to sign DD9 up for one that was happening in just a couple of hours! However, I realize we were there a slower time of year. Sign up is right around the corner from the show. Any CM should be able to point you in the right direction.
By the way, the kids do need to be there for the sign up.
