Are Universal tickets upgradable like Disney tickets?
Specifically, if I buy a 1-day, 2-park ticket, use it for entry, then later that day decide I want to come back for a second day, can I upgrade to a 2-day 2-park ticket before the first day is over?

absolutely you can do this. we modified our 4 day tickets to 14 day tickets on our last trip.
just go into customer service at the park, they will hook you up.
Disneyland: many, MANY times!

I am stumped by your reply.
The question was about tickets at Universal Studios, which as far as I can tell sell at-most 5-day tickets.
But then Disney only sells up to 10-day tickets, so I am confused where your upgraded to a 14-day ticket (unless you live outside the USA).

yes, very interesting answer. And who would go to Universal for 14 days even if you could buy tickets for that long? You could go on the rides about 47 times each.

Yes, we had 1-day, 1-park tickets and upgraded them!
And they were awesome about it ... our tickets were old, so they eventually gave up trying to "upgrade" them, and sold us new tickets, minus the current 1 day, 1 park price.

Do you mean you did that before you entered the park? Or did you do what I want to do, which is use the ticket for one day and upgrade before leaving the park? I think there's a difference. What I want to do is try to do both parks in one day, but if that doesn't work out, I want to be able to add a day.
And, John, in reply to you, honestly, I know this is Universal and they may be different, but I've called and asked Disney a similar question before and they gave me the wrong answer. I supposed I'll still have to call, but I actually trust knowledgeable people on this board more than I do a semi-trained service rep.

Im not sure of all the specifics. We were staying at the club level at Portofino bay and the concierge in the club level had told us what to go ask for. She wrote it down on a piece of paper.
We started with 5 day park to park tickets (2 parks) and we were just wanting to add on an extra day and it was cheaper to upgrade to these (whatever was recommended to us) tickets than to purchase a 1 day ticket.
it is possible maybe it was less days with 14 days to use them, i really am not 100% sure. I do know we went into customer service, handed them the note that said what we should get, paid them a few bucks and walked out with more days.
It also included the water park (wet n wild? at the time) but we didn't make it there.
Im pretty sure it wasn't their annual pass - as the 14 day thing i remember hearing more than once.
Main point is.. yes, you can upgrade and they make it really easy for you.
Also, worth mentioning that we did the upgrade on our 3rd day there and was in June of 2016.

OK, I get it now. You had 14 days to use them, but it wasn't 14 days of admission to the parks. Makes sense.
