I blew my chance at getting engaged at Disney because a couple of months before we went on our trip, a friend told me that his cousin got engaged at Disney and I relayed the whole elaborate story to my BF so he didn't think it would be a good enough surprise!!
I would have to say everyone else's suggestions are great! If it were me, the moment I walk down Main Street and see the castle is magical to me. Maybe you should try and figure out what is most magical to your woman and plan something around that.

Does anyone know if any of the hotels will do anything special if you tell them at check-in that you are getting engaged? And will any other restaurant at WDW help with the proposal?
It's possible you would get a special acknowledgement at a resort if you let them know but it's not a given and I wouldn't count on it. If it happens, it's nice, but don't be disappointed if nothing happens.
It's also possible that cast members at the restaurants will help with your proposal but I'm not aware of any formal system in place to provide this assistance.
