Is it true that the beds in the value resorts are double size beds but the beds in the moderate resorts are queen size beds?

That is generally a true statement. Although at least some of the Values (POP for example) do have King beds in a few rooms. And the suites at AOA and ASMu have a queen bed in the bedroom.
The Moderates have 2 queen beds. Some rooms at the mods have a single King bed.

I have stayed in two different rooms at ASMovies that had a single King Bed.

King bed rooms have to be booked as such.

I am not sure about Moderates and Deluxe, but I do not think you can book a King bed at a Value, it's a no-guarantee request.
I also think that all King rooms are also handicapped accessible rooms, so no bathtub, only roll-in showers with grab bars.

A modifer to this: Caribbean Beach Resort does not have Queen beds in their Pirate Rooms.

Generally, for the average room, it's true that the values have 2 double beds or 1 king bed and you cannot choose. AoA and ASMusic have 1 queen bed in the bedroom of the suites and double sleeper sofas, single sleeper chairs, or the pull-down double bed table in the living spaces. The moderates have 2 queen beds, 2 queen beds and a single pull-down bed, or 1 king bed except in the Pirate rooms at Caribbean Beach which are all 2 double beds and in the Fort Wilderness cabins which have a double bed and a set of bunk beds in the bedroom and a double-bed-sized Murphy bed in the living area.
