A couple of our favourite non-park things have included Archery at FW. We've done it twice and really enjoyed it both times (could be paired with a fun, easy meal at Trail's End, or even Hoop Dee Doo), and riding around the Fort on a bike rental.
We also loved the night safari at AKL, could be paired with a meal at AKL as well.
