I was reading the Terms & Conditions for Galaxy's Edge Custom Astromech Units. It says "You may use or play with your droid only within the Star Wars Galaxy's Edge land". Does that mean you can't take it home with you?

No, it means you can't have it rolling/driving around in the rest of DHS, or in the other parks.
That would be cute ... and annoying to have all these droids underfoot all over the place.
