I'm staying at Caribbean beach and have a breakfast reservation at 'Ohana. I will have a car. Should I just drive over to the Polynesian resort? And if I do, will I have to pay for parking since I will already be paying for it at the Caribbean beach?
Yes, drive. It'll be much quicker. You'll get a parking pass for your car at CBR. You won't have to pay at Poly unless you use the valet service. Parking at Poly is pretty limited, but as long as you have an ADR, the guard should allow you through the gate.

Driving will be the easiest. I've never had any problem parking at Poly even without a dinning reservation.
You can also park at the Transportation and Ticket Center and walk to the Polynesian from there.
