Has anyone done this? Are Uber cars allowed within the resort property?

Yes, they are allowed. My daughter and I took an Uber from AKL Jambo to Contemporary last month. It was about $11. The taxi quote was $25 to $30, so Uber was our choice. We were dressed up for Cali Grill and didn't want to take the bus to MK & walk over to the Monorail.

Yes I've used it a good bit. It's great to go from resort to resort (esp in the rain!). It's a little tougher to go from park to hotel.

uber works great going from resort to resort -- and as someone above said, MUCH cheaper than a cab.
