Does anyone know the name of this place and can you make reservations? We are staying there this Nov and looking forward to having a drink on the roof for my birthday.

The name of the new restaurant is Toledo – Tapas, Steak & Seafood. You should be able to make reservations and it is not a signature restaurant. I think you can see the menu as well.
We will be there in Sept and our first time at Coronado Springs.
