I made ADRs for my June trip to WDW and even got Be Our Guest. Made all of them for 4 but appears it will probably only be 2 of us going. Do I just leave the reservations with 4 and tell them when I get there that I only have 2 or try to change them ahead of time?

I think you will be fine just telling them you only need a table for two when you arrive. We had only 3 (instead of the 4 reserved) on one night of our recent trip and it was no problem.

I would rebook those that you can and for the others leave them for 4 and let them know when you arrive.

:exactly: I'd do the same thing. If you can rebook, then it opens up a space for 4, but if not, don't worry and let them know when you arrive.
