It has been internally announced that PizzeRizzo at Disney's Hollywood Studios will be temporarily closed for multiple months. The closure was reportedly described as an 'operational change' rather than a refurbishment.
The counter service location is scheduled to be closed from October 27, 2018 till 'Spring 2019'. Public Operational Calendars show the location closed through at least the end of March 2019.
A specific reason for the closure has yet to be reported.

Is it possible that it has anything to do with any reconfiguring of walkways etc related to Star Wars: Galaxy's Edge (brought to you by Samsung;))?

Could be. Just looked at the satellite view on Google map. It looks like they have room for a path that goes around the back of Star Tours and into the muppets court yard (there is already an access road there that is probably used to supply the restaurants and gift shops in that section of the park).
That way they could connect Star Tours with Galaxy's Edge without a weird theme break if you look towards the muppets court yard.
