For those extra items, such as alcoholic drinks souvenirs, etc, can you use a Disney Gift Card or does everything have to be charged through the credit card on your room key?
As far as I know, gift cards are accepted everywhere.

I may be wrong but I believe you need to use your room key. However you can add the GC to your onboard account.

On the cruise ship, you have to charge everything to your onboard account. You can go to guest services with your gift card to pay down your balance at any time before the cruise ends.
