Love the Carthay Circle Lounge at DCA. It's my new favorite. But like Nat said, all of them!
Ooh, in which land is the beer truck? Someone also told me the Cove Bar attached to Ariel's Grotto is a nice hideaway.
I suppose we'll have to sample the lounges at each of the 3 hotels....

The Napa Rose Lounge is awesome for a late night glass of wine and gourmet dessert.
Trader Sam's, obviously.
Paradise Pier has no lounge worth going to.
The beer truck is in the Pacific Wharf area of the park. There is a Margarita stand nearby as well.
The Terrace Bar at Wine Country Trattoria in DCA is a nice place for a midday break as well.
Hearthstone Lounge at the Grand Californian is cozy and they have some good bar food.
Uva Bar in the center of Downtown Disney is a GREAT bar and the food there is amazing.

Well now we are in good shape! ; ) I really appreciate everyone's input. Less than 6 months to go! On to planning WOC and Fantasmic viewing. Much to do!

I should have clarified Paradise Pier HOTEL has no good bars.
The Cove Bar in Paradise Pier (the land) is a nice spot.
