I was just looking at posted park hours for the week we'll be there at the end of July. Is it typical for the parks to open at 9:00 during the Summer? Do they usually start posting earlier hours further in?

No. 9am is the normal opening for the parks. On mornings when a park is having EMH, then that one park will open at 8 for resort guests. But 9 is normal.

Lately, Disney has been mo mg the Magic Kingdom opening to 8:00 AM on really busy days. We will be there June 13-20, and it is opening at 8:00 AM a few days. This is the general opening and not EMH.
They used to only do this during Easter season and Christmas season, but seem to be doing it more lately. If it is really crowded that week, don't be surprised to see MK open at 8:00 AM.
