We went to wdw in sept 2014. I booked the entire trip in October of 2013. We are looking to go again in 2016, problem is the site won't show any dates later then 12/31/15 . What's the story here?

You're just a bit too early!
Packages for the next year are usually released in the summer. You can book room-only now, but if you're looking at a package, you'll have to wait until rates are released.
I'm an early planner like you, and sometimes find the wait frustrating too.

I'm feeling the struggle right now to. I normally don't plan quite this early but once I get it in my head I want everything booked and done.
