I have a question regarding FP+ and ADRs.
I know that ADRs are 180 (+10) days out and FP+ is 60 days out if you are staying on property. What I don't know is what time can you start trying to book these? Is it Midnight or a time like 7 or 8 am? I'm assuming whatever the time is it would be Eastern standard since that is the time zone WDW is in.

ADR's open at 6am online, or 7am on the phone (and yes, you're right, it is Eastern time).
FP+ start "around" midnight. The window often doesn't open exactly at midnight, but shortly after. I think for me, the last time we booked FP+, it was about 12:15am, and then I was all good to go. Again, this is Eastern time ... so I'm a bit grumpy the next morning.
