So I know I can just assign a custom magic band to my daughter on My Disney Experience, but my new question is:
If I order it now for her birthday, can I just wait to assign it on our account until later?

Yes. You can wait to link it if you want. There's no real need or benefit to doing it right away. All reservations, ADR, FP+ etc. are kept on your MDE account. Bands are merely a method of accessing that information.
