We arrive at 9am to MCO. We don't have park tickets this trip and just plan on spending a day exploring. We want to ride the skyliner and visit chicken guy. My plan is drive to Disney Springs and catch an early lunch at Chicken Guy, then catch a bus to POP century and ride the Skyliner to Epcot and then walk to Boardwalk for some dessert. Then a bus back to Disney springs. For dinner at possibly a resort you can take a boat to.
Its been a while since I have driven in Orlando so I wasn't sure if bus service to resorts was running that early in the morning from Disney Springs. And I also didn't know if my car would be ok being parked at the parking Garage all day.

By the time you get to the resort the busses will be up and running. The DS stores open at 10am, the busses are running earlier than the store opening.

Parking your car all day at Disney Springs should not be a problem. I don't see any problems with what you are planning to do.
