Hello! I'm a ways off from making FP+ Ressies for our group of 9, which includes a 9 month old baby. I'm just wondering if I need to include her in the numbers when I'm booking rides and shows. I know she doesn't actually have a ticket, so I don't think I count her- but I had to count her in the dining reservations, so now I'm not sure.

No, she doesn't have a ticket, so she doesn't need FP+. Any ride (without a height requirement) or show that the person holding her has a FP+ for, she's included.

Correct, no ticket, no need for a FP+ but you do need to include them on dining reservations.
