I have an opportunity for a 5 day 4 night visit to the Sheraton Vistana Resort at a great price. What is there to do in Central Florida outside of visiting Disney and Universal? I can see a visit to KSC, but what else would you recommend?

What types of things do you like? When would you be going? You could go to Disney Springs. Boardwalk is closed right now, but maybe it will be open by the time you go. You could go to Hoop Dee Doo and wander around Ft Wilderness stuff.
Outside of Disney, I did the chocolate kingdom factory tour and loved it. I love chocolate. May not be your thing.
We have done a helicopter tour. There's some weird souvenir shops to see.
Gatorland if you want to see gators.
The Holy Land Experience was kind've neat.
There are some museums and gardens.
