Walt Disney Imagineering has released more concept art for the new Star Wars Lands slated to open in 2019 and a new video describing more details:

As noted in the video, it appears the new Lands will tell primarily an original story rather than retell a story from one of the current or future films.

It actually is being built pretty quickly, compared to Pandora and New Fantasyland...it is super exciting seeing the show building for what I assume is the Stormtrooper ride, at Disneyland. It is a HUGE, multi level building. It will be done before you know it. Time flies.

Its all about the authenticity, just like Everest when they went there and studied the mountain and surrounding area, they had to travel to the replicated planet and get the details to reproduce them here. LOL, I thought the idea was funny.

To Natalie's point, a 2019 opening does indicate a relatively more expedient construction cycle than some of the other recent Walt Disney World projects--however, they are still much longer than some of Universal's current endeavors or their own projects from 10-20 years ago.
