Those are all audio though, not visual (I did like the switch to Dame Judi Dench in Space Ship Earth). But have they ever taken the visual face of an ride opening narration and switched it to someone else?

No, but having both is somewhat uncommon. Soarin, what else? Not many. Mostly just the voices.

I guess you're right, seems like there is more, but I can only think of Soarin, Mission Space and Dinosaur at AK. You could argue that Rock N Roller Coaster with Aerosmith could be included I guess, but not nearly as many as I thought.
In addition to the updated on-ride films and motion sequences, Guests visiting the "re-launched" Mission: Space attraction will also encounter a new pre-show film.
Gina Torres (most notably of Suits fame) has replaced Gary Sinise in the attraction's pre-show film.
Another notable change has been the lowered ride height for the Green Team Mission from 44" to 40". The Orange Team Mission remains at a 44" ride height requirement.
