Well, it's Eastern Daylight Time right now, but yes, it's midnight, Eastern time.
And yes, you can make them for your whole trip - or at least for the number of days for which you have tickets.

It's midnight Eastern unless or when MK closes. That is if there are extra magic hours till 1:00 am, you will have to wait until 1:00am Eastern.
Learned that first hand. got on at 12:00 and could not get FP+ checked MK hours sure enough EMH. FP's opened as soon as the park closed
